I would like to blame the warm weather for the lack of posts latley. How can you not want to be outside all day when it is above 45 degrees on the east coast? I even went for my first outdoor run of the year! Unfortunately, my feet are giving me problems again, and my shin splints have returned. But lets keep it positive.
This warm weather has inspired me to make some new recipes, as well as bringing back a few of my favorites that I haven’t made it a while. I do plan to post them in the near future, but for now I am going to keep it simple.
If you have read my previous post featuring my easy recipe for honey-mustard dressing, you know that I am such a fan of making my own salad dressings. a) It is cheeper. b) It is healtheir c) You get to experiment! Here is my latest creation…
Yogurt Balsamic Dressing
1/3 cup Balsamic Vinegar
1/3 cup Plain Yogurt (optional: Greek Yogurt)
1 tablespoon oil (Olive, Flax, or Canola)
1 1/2 teaspoons mustard
1 teaspoon agave nectar (or honey)
Step one: Gather your ingredients
Step Two: Place them in a glass bottle or jar
Step Three: Shake it up & Pour it on!
Does it get any easier then that?
